Homemade Blackberry Goat Milk Ice Cream Recipe

First off let me say you can obviously use regular milk instead of goat milk in this recipe. Secondly, if you have enough of this left after making and eating to freeze beware that it will freeze hard, not creamy. It is still good, but less like store bought ice cream.

1-2 cups of frozen blackberries
1 can sweetened condensed milk
48 oz. fresh goat milk (or cow milk if you prefer)
1 cup raw sugar
2 teaspoons vanilla extract

Wash blackberries after picking and put in a sandwich bag in the freezer. Once frozen put berries and condensed milk into mixing bowl and add milk, sugar, and vanilla and blend well with a hand mixer while ice cream maker container is chilling in the freezer. Pour up mixture into ice cream maker and process for 40 minutes or so. Voila!

Extra Tips

If you like your berries tart you'll like this ice cream, but if you prefer them sweet you'll need to let them macerate in some sugar before freezing or they might be too tart for you. If you like them crunchy then this is the recipe for you, but if you like the flavor without the crunchy chunks of berry you might want to per-mash the berries before freezing/blending.

Out of everyone that tried this fresh ice cream I had no complaints; everyone loved it! Everyone agreed that the berries were crunchy and tart but that it balanced with the sweetness well. Enjoy!
